Sweet Tooth: Brownies

While doing this program I wanted to still be able to eat the sweets I love so much, but didn’t want to use flour and I didn’t want to have any added sugar. So like anyone else in my position, I searched the internet for a recipe. Let’s just say I found one and changed a few things. :p

The recipe is vegan flour less no sugar added brownies, however I’ll let you in on a secret, the first time I made these brownies I used semi sweet chocolate chips that had added sugar. >.< I didn’t pay attention which resulted in added sugar, not a lot but still. Heres another thing, if you have a sweet tooth like me, the brownies taste richer and sweeter with semi sweet chocolate chips than they do with the no sugar added chocolate chips. With no sugar added chocolate chips the brownies taste dark chocolate richer. Either way you make them, they still taste great and chocolaty!

This recipe I used says to use chia eggs or eggs, however, I didn’t like either idea so I used flax eggs. Which is flax meal and water. To make flax eggs it is one tbsp of flax meal to three tbsp of water.

You let the mixture sit for about five minutes while you prepare everything else so it has time to thicken. I feel using flax eggs you don’t taste it and it works just as good as eggs do.

These are the chocolate chips I used. I ended up using two pouches, one pouch for the brownie mixture and the other for the ganache that went on top of the brownies after they were doing being baked and cooled off. These pouches can be recycled! I found them at my local Walmart in the baking section.

When the recipe tells you to grease the pan, but you want an easy way out lol I put parchment paper on the bottom and sprayed this all over the pan. I also doubled the recipe and ended up using a bigger pan than recommended.

The way the batter looks after doubling it and putting in the pan to bake. As you put it in the pan, the batter can be very thick so you need to gently spread it throughout the pan. Don’t worry about how low it looks, the brownies rise quite a bit. When they are done baking, let them cool and put them in the fridge for about an hour or so to give them a fudge like taste. If you forget about them in the fridge like I did, leave them out the next day for about an hour and then you can cut into them and eat them. They won’t be as hard as a rock anymore lol

When melting the chocolate, I used one pouch of chocolate chips to about two tbsp of unmelted coconut oil. That is if you use the same chocolate chips as I used. Please feel free to use any chocolate chips you please. If you do, use about one cup of chocolate chips and start off with about one tbsp of coconut oil. Then if the mixture needs more coconut oil you can add from there. After putting the ganache on the brownies I recommend putting them in the fridge for about an hour or so to let the ganache settle.

I’ll admit I slightly burned the edges of these brownies because I used the convect oven and still followed the recommended time in the recipe which was too long >.<

P.S. In case you didn’t know convect ovens cook things at the same temperature in shorter amounts of time hence why the brownies were slightly burnt on the edges.

My review of these brownies, even with my changes, they are actually pretty good. I enjoy them and they curb my sweet tooth cravings. They are very rich no matter how you make them and I enjoy a cold glass of almond milk with them. I am happy with the turn out of these brownies and it isn’t time consuming either. They are easy and quick to make. I would recommend anyone to try them out and see how they like them.
